Pinot Noir
Our third core grape flavour is Pinot Noir, a seductively sexy wine that like Chardonnay has its routes in Burgundy in France, but unlike Chardonnay has been very fussy about which soil and microclimate it will migrate to. A rarer breed, but a classically distinctive flavour and in contrast with Bordeaux Cabernet Sauvignons and Merlot, lighter in tannin with a delicacy and yet intensity of flavour that makes the pairing experience individual.
Highly flavoured foods can overwhelm the delicacy of Pinot Noir, the key is acidity which this wine has which enhances food with a higher fat or salt content.
